Tasty Tuesday

I was watching The Chew last week and they made this delicious looking pasta salad!  I"m not a big pasta fan, but I love grilling and it looked quite fabulous!

Whole Wheat Pasta Salad with Grilled Veggies

I'm not really a fan of zucchini or yellow squash, so I didn't add those, but I did add mushrooms!  I live in a condo, so no flame grills allowed.  I grilled my veggies on my electric grill and they were great.  It seems you can add whatever grilled veggies you'd like and it will be fantastic!

I did not find the lemon thyme or parsley (oddly enough the day I need it, they are out) at the store, so I just bought regular thyme and replaced the parsley with basil.  It was still delicious...go with your favorite herbs for the dressing and it's sure to be great!

I have walked 2.25 this week, how about you?  We have about 5 miles a week, so if you haven't started yet....get on it! :)

Tasty Tuesday

Living a healthier lifestyle includes eating well, so I'm trying some new recipes.  I looked through my Food Network Magazine and found this grilled chicken recipe:

I fired up the grill and gave it a shot.  It was delicious and very easy to make.

I paired it with a tomato and avocado salad and sweet potato fries.  The flavors complimented each other...tangy mustard chicken, cooled by the tomatoes and avocados, and sweetened by the fries.


I'll definitely use this wonderfully healthy summer recipe again!

A Father's Paradise

I thank God each day for all of the blessings I have in my life, one of which is my amazing parents.  So, in honor of Father's Day, we celebrated in his "paradise." 
We started with a lovely breakfast prepared by meeee...Smoked Salmon Omelet (courtesy of one of my favorite Food Network Stars, Sandra Lee), fresh fruits and whole wheat bread.  Yummy!


Then, we went to the beach and fought the waves!  It was an eventful day at the beach with family friends (highschool friends of my parents), surfers, windsurfers and sharks...yes, sharks!

We are going for an early dinner so that we can be back in time to watch the end of the U.S. Open and to watch the NBA Finals...GOO HEAT! 

Sounds like a Father's Paradise to me...and all with healthy meals and exercise (fighting those waves and rip currents today was quite a workout).  I guess we've gotten an early start on our Miles of Fun!
